Pumpkin Bars with Cream Cheese Frosting

Ingredients
- Cream Cheese Icing:
- 3 Cups Sugar
- 3 Cups Flour
- 1 1/2 cups Vegetable Oil
- 6 Eggs
- 2 lbs. Canned Pumpkin
- 3 tsp. Baking Powder
- 1 1/2 tsp. Baking Soda
- 1 1/2 tsp. Pumpkin Pie Spice
- 6 oz. cream cheese, softened
- 12 T. Butter, softened (equals 1 1/2 sticks)
- 2 T. Vanilla
- 6 Cups Powdered Sugar (a little over 1 bag)
- Milk

Step 1
Combine all the the first 8 ingredients together and beat until smooth. Spray a jellyroll pan, pour batter into pan, spread evenly with a spatula and bake at 350 for 25-30 minutes, so until toothpick inserted in the center comes out clean. For the frosting, combine all the ingredients in mixer, add a little milk at a time and continue beating and adding little amounts of milk until the frosting gets to a thick/fluffy/creamy consistency, not runny. Frost the bars when they are done cooling.
