BBQ CHIPOTLE CHICKEN SANDWICHES (WITH MANGO GUACAMOLE)

Ingredients

  • 1 recipe Chipotle Chicken using 4 chicken breasts pounded thin (click HERE)
  • Chipotle Chicken Rub
  • 2 tablespoons olive oil
  • 1 teaspoon chipotle chili powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon lime juice
  • 1/4 cup sweet barbecue sauce
  • Toppings
  • 4 slices pineapple
  • 4 burger/sandwich buns
  • 4 slices Monterey Jack cheese
  • tomatoes
  • lettuce
  • red onions
  • bacon (optional)
  • Easy Mango Guacamole
  • 1 large avocado, peeled and pitted
  • 1 mango, chopped
  • 1 tablespoon lime juice
  • 2 tablespoons sour cream
  • 1 tablespoons mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • salt and pepper to taste

Preparation

Step 1

Easy Mango Guacamole: Add all of the contents to a medium bowl EXCEPT mangoes. Mash guacamole to desired consistency and stir in any remaining sour cream and mayonnaise. Stir in mangoes. Season with salt and pepper and additional lime juice to taste.

Chipotle Chicken: Prepare according to recipe directions. Once cooked, toss with 1/4 cup barbecue sauce or enough to generously coat, then top with cheese.

In a small bowl, whisk chicken rub ingredients together and rub evenly all over chicken breasts. Time permitting, allow chicken to sit for 30 minutes at room temperature or refrigerate up to 8 hours then bring to room temperature before cooking.*

STOVETOP DIRECTIONS
If chicken has been refrigerated, let sit at room temperature for 15-30 minutes (time permitting).

Heat a large non-stick skillet over medium high heat. Once very hot, add chicken and cook, undisturbed for 3-5 minutes, or until nicely browned (or blackened if you prefer) on one side.

Turn chicken over, cover, and reduce heat to medium. Cook for approximately 5-7 more minutes (depending on thickness of chicken), or until chicken is cooked through. Remove to a cutting board and let rest 5 minutes before slicing.

GRILLING DIRECTIONS
If chicken has been refrigerated, let sit at room temperature for 15-30 minutes (time permitting).

Meanwhile, grease and preheat the grill to medium heat, 375-450°F.

Grill chicken undisturbed for 5-7 minutes per side, or until chicken is cooked through. (An inserted thermometer should read 155 degrees F.)

Remove chicken from grill and let rest 5 minutes before slicing.

NOTES
*Chicken is still delicious even if cooked immediately but is more flavorful the longer the rub marinates.

**Total time does not include marinating chicken as this time will vary per individual.

Pineapple: Lightly grease grill and grill over medium-high heat for 8-10 minutes or until lightly charred and caramelized, flipping once (you can add to grill with chicken).

To assemble: Stack bottom buns with lettuce, chicken, pineapple, tomatoes, and lettuce. Drizzle with additional barbecue sauce if desired.
