Bourbon Peach Pie Bars

Ingredients

  • 1 Pillsbury™ Refrigerated Pie Crust
  • 3 fresh peaches
  • 1/2 cup brown sugar
  • 1 teaspoon corn starch
  • 1 teaspoon vanilla
  • 1 bottle bourbon
  • 1/2 teaspoon cinnamon
  • 1 egg yolk
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice

Preparation

Step 1

1. Preheat the oven to 375°F.

2. Peel 3 peaches and cut into slices. Soak them in a jar (or two) with bourbon. You only need to soak them for about 20 minutes as they take on the strong bourbon taste quickly.

3. While they’re soaking, press one pie dough into an 8 x 8 pan.

4. Strain the peaches. In a bowl, add brown sugar, corn starch, cinnamon and vanilla in a bowl and stir until combined.

5. Arrange the sugary peaches in the pan, then scoop some of the remaining juice onto the peaches.

6. With the other pie crust, lay it out on a cutting board. Cut strips to make a lattice pattern on the top of the peaches, just like an old fashioned pie.

7. Brush the top of the crust with an egg yolk mixed with a teaspoon of water.

8. Bake for 20-25 minutes.

9. In a small bowl, combine powdered sugar and lemon juice and stir until it’s the texture of a glaze.

10. Once the bars are cooled, drizzle the glaze over the top.
