Ingredients

  • 3 Tbsp. olive oil
  • 2 med. onions, chopped
  • 1 clove garlic, chopped
  • 4 green peppers, seeded, cut into strips
  • 6 large tomatoes, cut up
  • 1 tsp sugar
  • 1 tsp oregano
  • 1 tsp. salt
  • 1/2 tsp ground black pepper
  • 4 basil leaves, finely chopped

Preparation

Step 1

1. Put oil into saucepan and cover. Cook over medium heat until hot. Add onions and garlic and fry until golden brown.

2. Add pepper strips; cook briskly until they are soft. Add tomatoes, salt,sugar, oregano, pepper and basil.

3. Cook until mixture begins to boil; lower heat and simmer 1/2 hour.

4 Serve hot as a side vegetable dish with any meat, or over rice.
