Ingredients

  • 2 C sugar
  • 1 C butter
  • 1 egg
  • 15 oz. can mashed pumpkin
  • 1 C chopped walnuts
  • 1 C golden raisins
  • 1 t cinnamon
  • 1/2 t cardamom
  • 1 t salt
  • 2 t vanilla
  • 2 t baking soda
  • 2 t baking powder
  • 4 C flour

Preparation

Step 1

Melt butter. Add sugar and mix. Stir in egg. Add all the rest of ingredients except flour. Mix. Add flour one cup at a time. Let rest for 5 minutes.

Drop by spoonfuls on greased cookie sheet. If dough is too sticky, refrigerate.

Bake for 8 - 10 minutes at 375 degrees.
When cookies come out of the oven, leave on cookie sheet and press candy corn pieces on top. Do right away so candy will stick. Leave on sheet for two minutes. Then move to cooling rack.
