Ingredients

  • 4

    pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks

  • 1 1/2

    cups heavy cream

  • 6

    tablespoons unsalted butter, cut into pieces

  • 2

    cups grated Parmesan cheese

  • 1/2

    cup grated Asiago cheese

  • 2

    teaspoons salt

Directions

1. Bring potatoes and enough water to cover by 1 inch to boil in a large pot over high heat. Reduce heat to medium and simmer until potatoes are tender, about 20 minutes. 2. Heat cream, butter, cheeses, and salt in saucepan over medium heat, whisking until smooth, about 5 minutes. Keep warm. 3. Drain potatoes and return to pot. Stir over low heat until potatoes are thoroughly dried, 1 to 2 minutes. Pour cream mixture over potatoes and mash with potato masher until evenly incorporated and creamy. Serve.
