Ingredients
- 5 small heads of garlic (4 large heads)
- 1 tablespoon olive oil
- 1 1/2 cups (3 sticks) unsalted butter, room temp

Preparation
Step 1
Preheat oven to 300 degrees F. Line a baking dish or pie plate with foil so that it hangs over the edge and add the olive oil. Cut each head of garlic across the middle and carefully place on top of the foil, cut side down. Loosely cover garlic with the overhanging foil and bake for 45 minutes or until soft. Let the garlic cool then squeeze out of the skins into a bowl and mash roughly. Add the butter and mix to combine.
Portion garlic butter into the cups of one and 1/2 mini muffin pans and freeze until solid.
