Ingredients

  • 1 cup milk
  • 1 Tb lemon Juice
  • 1 tsp vanilla
  • 1 1/2 c brown sugar
  • 2/3 c oil
  • 1 egg
  • 2 1/2 c flour
  • 1 sp salt
  • 1 tsp baking soda
  • 1 1/2 c rhubarb, chopped
  • 1/2 c brown sugar
  • 1 tsp cinnamon
  • 2 Tb melted butter

Step 1

Lightly grease 2 loaf pans. In small bowl whisk together the milk, lemon juice and vanilla. Let stand for 10 min. In large bowl, combine 1 1/2c brown sugar, oil and egg. Mix the flour, salt and baking soda; stir into sugar mixture alternately with milk mixture just until combined. Fold in rhubarb. Put in pans. Mix together 1/2 c brown sugar, cinnamon and butter; sprinkle over unbaked loaves. Bake at 325 for 40 min. Coll 10 min and remove from pans.
