Ingredients

  • Cream cheese frosting:
  • 2 C flour
  • 2 t. Baking soda
  • 2 t. Baking powder
  • 1/2 t. Salt
  • 3 t. Cinnamon
  • 4 eggs
  • 1 1/4 c. Oil
  • 1 C. Sugar
  • 1 C. Brown sugar
  • 2 t. Van x
  • 3 C. Grated carrots
  • 1 C. Chopped walnuts
  • 1 C raisins
  • 8 oz cream cheese
  • 1/2 C butter, soft
  • 2 C 10 x
  • 1 t. Van x
  • (I double for layer cake)

Preparation

Step 1

Mix all dry ingredients in med bowl & set aside.
Mix eggs well, add oil, sugars, van.
Add carrots,
Add dry ingredients. Mix well.
Add walnuts & raisins.
Bake til toothpick comes out clean in middle of cake.
Cool in pan for a few mins, then cool on wire rack.
For icing: mix all ingredients. Ice cake when cooled.
