Orzo, Spinach, and Tomato Salad

Ingredients
- 1 pound orzo, cooked according to package directions
- 1 pound baby spinach, torn into small pieces
- 1 cup cherry or grape tomatoes, cut in half
- 1 cup (8 oz.) feta cheese, crumbled
- 4 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 2 cloves garlic, minced
- sea salt
- fresh ground black pepper

Preparation
Step 1
Combine the orzo in a large serving bowl with the spinach, tomatoes, and feta. In a small bowl, whisk the olive oil, lemon juice, and garlic together. Season with salt and pepper, then pour over the salad and toss to blend. Let stand for a few minutes and serve.
