Creamy Carrot and Ginger Soup

Ingredients
- 1/4 cup peanut oil or extra virgin olive oil
- 1 Tbs minced garlic
- 1 Tbs minced ginger
- 3 lbs sweet carrots,peeled and thinly sliced(loose carrots are better)
- 1 Tbs salt,plus additional for seasoning
- white pepper plus additional for seasoning
- 1 Tbs honey
- 8 cups vegetable stock
- 1 cup heavy cream
- 2 oz. unsalted butter
- chopped scallions or chives

Preparation
Step 1
In a stockpot,heat the oil and saute the garlic and ginger for 1-2 min or just until glossy.(don't allow to develop color)
Add carrots,salt,pepper and honey. Saute for 2 min,stirring constantly. Add stock and bring to a boil.Lower to a simmer and add the cream. Cook uncovered for 40 min.or until carrots are tender. Add the butter and process using an immersion blender. If the soup is too thick add more stock. Taste and adjust seasoning with salt,pepper and honey. Keep warm until ready to serve, or refrigerate until needed.
OPTIONAL; garnish with chopped chives or scallions
