Turkey Tortilla Casserole (or chicken)

Ingredients

  • 5 cups diced cooked turkey or chicken
  • 1 can cream of mushroom soup
  • 1 can 4oz diced green chilis
  • 1 can 7oz grenn chili salsa
  • 1 can 2oz sliced ripe olives, drained
  • 1/3 cup thinly sliced green onions
  • 3/4 teaspoon cumin
  • 8 each corn tortillas, cut into 1/2 strips
  • 2 cups shredded monterey jack cheese
  • 2 cups shredded cheddar cheese

Preparation

Step 1

IN a bowl combine the turkey, soup, chiles, salsa, olives, green onion, and cumin.

ARRANGE half of the tortilla strips in the bottom of a greased shallow 3 quart baking dish. Cover evenly wiwth half of the turkey mixture and all of the jack cheese. Top with remaining tortilla strips and the
remaining meat. Sprinkle cheddar cheese evenly over all. (This much can be done ahead and chilled for up to 24 hours.)

BAKE uncovered in a 350 oven for 30 minutes (45 if chilled) or until cheese is bubbly and mixture is hot throughout. Let stand about 5 minutes and then cut into squares.
