Ingredients

  • 2 cups flour
  • 2 tablespoons sugar
  • 3/4 cup butter, softened
  • FILLING
  • 8 ounces cream cheese plus one 3 ounce cream cheese
  • 1 1/2 cups powdered sugar
  • 2 teaspoons vanilla
  • /12 teaspoon salt
  • 3 cups whipped topping
  • TOPPING
  • 1 6 ounce raspberry gelatin
  • 2 cups boiling water
  • 3 10 ounce packages sweetened frozen raspberries, thawed
  • Additional whipped topping

Preparation

Step 1

In a bowl, combine flour and sugar; blend in butter with a wooden spoon until smooth. Press into an ungreased 9 x 13 inch pan. Bake at 300 for 20 to 25 minutes or until set. Cool.

In a mixing bowl, beat cream cheese, powdered sugar, vanilla and salt until smooth. Fold in whipped topping. Spread over crust.

For topping, dissolve gelatin in boiling water; stir in raspberries. Chill for 20 minutes or until mixture begins to thicken. Spoon over filling. Refrigerate until set.

Garnish with additional whipped topping before serving.
