Quick Beef Noodle Stroganoff

This was a recipe used in a high school cooking class and is easy enough for those just learning how to cook!
Mushrooms can be fresh or canned.
Sour cream needs to be added just before serving for best taste and texture.

Ingredients

  • 1 Tbsp Butter
  • 1/4 cup Onion, chopped
  • 1 clove Garlic, chopped
  • 1 lb Ground beef, lean
  • 6 oz Mushrooms, sliced
  • 3 Tbsp Lemon juice
  • 1 can Consume or broth
  • 1 teas salt
  • 1/4 teas pepper
  • 2 cups Egg noodles
  • 1 cup Sour cream
  • 1 Tbsp Parsley, chopped

Preparation

Step 1

1. Heat skillet over medium high heat and sauté butter, onion and garlic until lightly browned.
2. Add ground beef and cook stirring occasionally until all beef has been crumbled and browned. Stir in mushrooms (if using canned mushrooms include the juice), lemon juice, broth, salt & pepper. Simmer uncovered for about 5 minutes.
3. Stir in uncooked noodles and bring mixture to a boil, then cover and cook over medium low heat for about 10-12 minutes until noodles are tender.
4. Just before serving, fold in sour cream with the noodle mixture and heat but do not boil.
5. Transfer to serving dish and garnish with parsley.
