Gingered Berry and Ricotta Parfait

There is nothing more refreshing than fresh fruit for breakfast. If possible, use seasonal fruit when it’s at its best and least expensive. We’ve combined the fruit with skim-milk ricotta flavored with minced crystallized ginger – a surprise for the taste buds – that adds a bit of zing and sweetness.

Ingredients
- 2 cups diced strawberries
- 2 cups blueberries
- 2 tablespoons maple syrup
- 2 teaspoons grated lemon peel
- 2 tablespoons lemon juice
- One 15-ounce container part-skim ricotta
- 2 tablespoons minced crystallized ginger
- 1 1/3 cups granola

Preparation
Step 1
In a bowl toss berries with maple syrup, lemon peel and lemon juice.
In another bowl stir together the ricotta and crystallized ginger.
In 4 parfait or stemmed glasses layer berries, ricotta mixture and granola ending with a sprinkling of granola.
Tip: There are many good brands of granola on the market. Be sure to look for one that is low in sugar and fat and uses whole grains.
