  • 1.5 c. flour
  • 1.5 c. oatmeal
  • 1.5 c. brown sugar
  • 3/4 c. butter
  • 6 c. rhubarb chunked
  • 1.5 c. water
  • 1.5 c. sugar
  • 3 T. cornstarch
  • 1 tsp. vanilla
  • Cinnamon

Preparation

Step 1

Mix the flour, oatmeal, brown sugar and butter until crumbly. Spread half of mixture into a greased 9 x 13 can and place rhubarb on top.
Combine water, sugar, cornstarch and 1 teaspoon vanilla; cook over medium heat until clear. Pour over rhubarb and sprinkle with cinnamon. Place rest of crumbly mixture over rhubarb. Bake for 1 hour at 350.
