Bacon Wrapped Pork Tenderloin Medallion

Ingredients

  • 12-14 slices of bacon
  • 2 pork tenderloins, Trimmed of fat and silver skin, cut crosswise into 1 1/2 inch pieces
  • Kosher salt and pepper
  • 2 TBS veg. oil

Preparation

Step 1

1. Place bacon slices in microwave-safe pie-plate and cover with plastic wrap. Cook in microwave until piece shrink and release about 1/2 cup of fat but are neither brown nor crisp, 1-3 minutes (May also be done in oven). Transfer to paper towels until cool 2-3 minutes.

2. Wrap each piece of pork with 1 slice of bacon and secure with 2 toothpicks where end of bacon strip overlap.

3. Pat pork dry with paper towels.

4. Season with salt and pepper.

5. Heat oil in a 12 inch skillet over medium heat until shimmering.

6. Add pork cut side down and cook without moving the pieces, until well browned, 3-5 minutes. Turn pork and brown on second side, 3-5 minutes more

7. Reduce heat to medium. Using tongs, stand each piece on its side and cook, turning as necessary, until all sides are well browned and internal temp registers 145-150, 8-14 minutes.

8. Transfer pork to a platter and tent lightly with foil; let rest while making a pan sauce

9. Make maple mustard sauce or any other pan sauce you wish.
