Turkish Red Lentil Soup

Ingredients
- 2 Tbsp butter
- 2 medium onions, finely chopped
- 2 cups red lentils, well-washed
- 1 quart meat stock or broth
- 1 Tbsp tomato paste
- salt
- 1 Tbsp finely chopped parsley
- croutons

Preparation
Step 1
1. Melt the butter in a large saucepan over medium heat. Saute the onion for 8-10 minutes, or until lightly browned.
2. Stir in the lentils, stock, and tomato paste. Season with salt.
3. Cook for 25-30 minutes, or until the lentils are tender.
4. Remove from the heat and process in a food processor until smooth. Sprinkle with the parsley and serve with croutons on the side.
