Ingredients

  • 1 1/4 c. flour
  • 3/4 c. sugar
  • 1/2 c. oat bran
  • 1 tsp poppy seeds
  • 2 tsp baking powder
  • 1 c. milk (2%)
  • 1/4 c. melted butter or vegetable oil
  • 1 egg
  • 2 tsp freshly squeezed lemon juice
  • 2 tsp grated lemon zest

Preparation

Step 1

Preheat oven to 350. Spray 8x4 loaf pan w/cooking spray. Set aside.
In a large bowl, mix together flour, sugar, oat bran, poppy seeds, baking powder.
In a medium bowl, whisk together milk, butter, egg, lemon juice and zest.
Add wet ingredients to dry ingredients are moistened.
Spread batter in pan.

Bake for about 40 mins or until light golden brown.

Cool and serve
