Roasted Butternut Squash Combo

Ingredients

  • 1 medium butternut squash, peeled, seeded and cut into 1-inch chunks (about 4 cups)
  • 1 medium red or green bell pepper, cut into 16 pieces
  • 2 tblsp. olive or veg. oil
  • 1/2 tsp. seasoned salt
  • 1/2 tsp. dried basil leaves
  • 1/4 tsp. black pepper
  • 1/4 tsp. garlic powder

Preparation

Step 1

1. Heat oven to 425 degrees. Spray
13" x 9" pan with cooking spray. In large bowl mix all ingredients until squash and bell pepper are coated. Spread in pan.

2. Roast uncovered 15 to 30 mins. stirring once, until squash is tender.
