Ingredients

  • 2 lbs shrimp, butterflied
  • 1 lb mozzarella cheese
  • 3/4 lb fresh mushrooms
  • 2 (1 lb 12oz) cans crushed tomatoes
  • 1 med onion, diced finely
  • 1 1/2 cup dry white wine
  • 1/4 * 1/4 lb butter
  • * parsley, oregano, garlic, salt and
  • pepper to taste

Preparation

Step 1

Saute onion and mushrooms in oil, add butter and wine. Simmer 5 minutes and set aside. In a large pot, strain tomatoes. Add seasonings and onion, mushroom mixture. Simmer 30 minutes. In a casserole dish, cover bottom with sauce. Place shrimp in pan and top with mozzarella cheese and sauce. Bake at 350-degrees for 20 minutes. Place under broiler until cheese is lightly browned.
