Stir-Fried Salmon with Ginger & Noodles

Ingredients
- 2 tsp ginger, peeled and finely chopped
- 1 red chilli, deseeded and finely chopped
- 2 pak choi
- 2 skinless salmon fillets
- 385 g udon (or other stir-fry) noodles
- 2 large handfuls fresh baby spinach
- Soy sauce

Preparation
Step 1
Heat a wok and spray with cooking spray. Add ginger and chilli and heat for 30 seconds, then add pak choi cut into thin wedges and salmon cut into chunks. Stir-fry for 3-4 minutes.
Add noodles and a dash of water and briefly toss until noodles are hot.
Stir through spinach and cook briefly with cover on wok until just wilted. Serve in bowls with soy sauce on the side.
