Oatmeal Date Bars

  • Date Filling:
  • 1/3 cup soft butter
  • 3/4 cup brown sugasr
  • 1 egg
  • 3 tbsp. milk
  • 1 1/2 tsp. vanilla
  • 1 cup sifted all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 1/4 cups rolled oats
  • 1/2 cup finely-chopped nuts
  • 1 tsp. cinnamon, optional
  • 2 cups cut-up dates
  • 3 tbsp. sugar
  • 1 cup water



Step 1

Heat oven to 350 deg. Lightly grease a 9" square cake pan.

Cream butter, sugar and egg together until fluffy. Stir in milk, vanilla and cinnamon (if using). Sift flour, baking powder and salt together into creamed mixture. Add rolled oats and nuts and blend very well.

Put half of mixture in prepared cake pan. Spread evenly.

Combine dates, water and sugar in small saucepan and cook gently, stirring constantly, until thick. Cool.

Spread mixture in pan with date filling. Cover carefully with remaining dough.

Bake about 40 minutes or until well browned. Cut in bars when cool.
