Chicken Breasts Stuffed with Sundried Tomatoes

Ingredients
- 4 deboned chicken breasts, thin
- 12 sundried tomato halves, rinsed & patted dry
- 16 large basil leaves
- 1/2 c. flour
- salt
- pepper
- 1 1/2 tblsp. olive oil drained from sundried tomatoes
- 1/4 c. balsamic vinegar
- 3/4 c. chicken stock

Preparation
Step 1
Preheat oven to 350.
1. Chop sundried tomatoes & basil & place in small bowl.
2. If chicken is thick pound thin.
3. Place 1/4 of sundried & basil mixture at one end of chicken breast. Roll up & set aside. Continue with other chicken breasts.
4. Heat sundried tomato oil in large frying pan.
5. Place flour in a shallow bowl. Season with salt & pepper.
6. Dip chicken in flour & saute in oil on all sides.
7. Remove chicken & place in baking pan.
8. Bake until chicken is cooked about 10-15 minutes.
9. While chicken is cooking, add the balsamic vinegar to frying pan. Bring to a boil.
10. Add stock & return to a boil.
11. Reduce sauce by 1/4.
12. Remove chicken from oven. Slice into pieces & pour sauce over chicken.
To make ahead, brown chicken, place in baking pan & set aside. Make the sauce & set aside. At serving time bake the chicken as per the recipe.
