Grilled Halibut With Tricolored Pepper Relish

Ingredients
- 1/2 cup olive oil
- Salt and pepper, to taste
- 4 halibut steaks, 6 ounces each
- Juice of 1 lemon
- Tri-Colored Pepper Relish
- 1/3 cup cider vinegar
- 1/3 cup olive oil
- Juice of 1/2 lemon
- Salt and pepper, to taste
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 orange bell pepper, julienned
- 1/4 head purple cabbage, shredded
- 1/4 head green cabbage, shredded
- 1/2 cup chopped green onion
- 1/4 cup chopped fresh cilantro

Step 1
In a medium bowl, combine vinegar, olive oil and lemon juice with a pinch of salt and pepper; whisk together. Add vegetables and cilantro and stir. Season with salt and pepper. Let sit 10 to 30 minutes before serving.
Drizzle olive oil and salt and pepper on halibut, then squeeze lemon juice over fish. Cook on medium-hot grill for 3 to 5 minutes per side. Place halibut on top of the finished pepper relish and serve warm.
Makes 4 servings.
