Heavenly Potatoes and Ham

Ingredients

  • 1 3/4 lbs red potatoes, peeled and quartered
  • 5 oz sour cream
  • 3 TBS butter
  • 1/3 can condensed cream of chicken soup
  • 2/3 cup shredded Cheddar cheese
  • 2 TBS chopped green onions
  • 2/3 cup chopped lean ham
  • Kosher salt and pepper to taste
  • 1/2 cup Parmesan cheese flavored bread crumbs (or add Parmesan to crumbs)
  • 1 TBS melted butter

Preparation

Step 1

1. Preheat oven to 350F. Lightly grease a 9X13 baking dish.

2. Place potatoes in a large pot of water and bring to a boil. Boil until slightly tender, about 12 minutes. Drain and transfer to a large bowl.

3. Mix sour cream, butter, cream of chicken soup, Cheddar cheese, green onions, ham, salt, and pepper with the potatoes. Spread mixture in the prepared baking dish. Sprinkle with bread crumbs, and drizzle with butter.

4. Bake 30 minutes.

Makes 4 servings. Each serving = 13 Weight Watchers points.
