Ingredients

  • Crust:
  • 1 Box Yellow Cake Mix
  • 1/2 Cup Butter, softened
  • 1 Egg
  • 1 Tbs. Water
  • Filling:
  • 1 Cup Coconut
  • 8 oz. Cream Cheese
  • 1 lb. Powdered Sugar
  • 3 Eggs, lightly beaten
  • 1 tsp. Vanilla

Step 1

Preheat oven to 350 degrees. Mix cake mi, butter, egg and water. Mold with hands into a 9" x 13" baking pan. Sprinkle coconut over cake mix mixture; set aside. Cream together cream cheese, powdered sugar, eggs and vanilla. Pour over coconut crust. Bake for 40-45 minutes. Cool before cutting into squares. You can take the cake from the oven 10 minutes before it was done and sprinkle with coconut over the top for browning.
