Ingredients

  • 2 1/3

    cup whole wheat flour

  • 1 2/3

    cup sugar

  • 1 1/4

    teaspoon baking powder

  • 1

    teaspoon baking soda

  • 1

    teaspoon sea salt

  • 1

    cup coconut oil

  • 2

    eggs

  • 2

    ripe bananas, mashed

  • 2

    teaspoons lemon juice

  • 3/4

    cup walnuts, chopped

  • 1

    cup shredded coconut

Directions

Preheat the oven 350 degrees fahrenheit. Mix flour, sugar, baking powder, soda and salt in a large mixing bowl. Add coconut oil, eggs and lemon juice until all flour is dampened. Beat vigorously 2 minutes. Fold in walnuts. Sprinkle the top with coconut. Bake in a 13 x 9 x 12 inch pan for 35 minutes. Cool 10 minutes in the pan
