Spicy Pork and Cashew Stir Fry with Snow Peas and Red Peppers

Ingredients
- 1 T medium-dry sherry
- 2 t cornstarch
- 3 T soy sauce
- 2 t Asian sesame oil
- 3/4 lb boneless pork loin, thinly sliced and cut into 1/2 in strips
- 1 t sugar
- 3 T peanut oil
- 2 t minced peeled fresh ginger
- 2 t minced garlic
- 1/2 tsp dried hot red pepper flakes
- 1 large red bell pepper, cut into 1/4 in thick strips
- 1/2 lb snow peas, trimmed
- 1 c salted roasted cashews
- rice

Preparation
Step 1
Stir together sherry, cornstarch, 1 T soy sauce and then add sesame oil. Add pork, stirring to coat well. Let stand 10 minutes.
Stir together sugar and remaining 2 T soy sauce.
Heat wok/skillet over high heat. Add 11/2 T peanut oil, covering pan. Stir fry 1 t ginger, 1 t garlic, ¼ t pepper flakes for 5 seconds. Add bell pepper and stir fry 2 minutes. Add snow peas and cashews and stir fry 1-2 minutes. Transfer vegetables to a bowl.
Heat the remaining 11/2 T peanut oil. Stir fry the remaining ginger and garlic and pepper flakes for 5 seconds. Add pork and stir fry until browned and barely cooked through (about 2-3 minutes). Add vegetables and sweetened soy sauce until cooked through.
Serve over rice.
