Tuscan Grilled Sausage, Chicken & Sage Skewers
Ingredients
- 2 1/2 lb. boneless chicken breasts
- 1/2 C + 2 T Rosemary Garlic Oil
- 1 t chopped rosemary
- Salt & pepper
- 1 1/2 lb Italian sausage, cut into 2" pieces
- 24 large sage leaves

Preparation
Step 1
Rosemary Garlic Oil:
1 1/2 C olive oil
6 smashed cloves garlic
3 sprigs fresh rosemary
Heat olive oil & garlic in small saucepan over med heat, stirring occasionally, til garlic starts to bubble, 3-4 min. Add rosemary, remove from heat & let cool to room temperature. Transfer to glass jar. Use within 5 days.
Marinate chicken in med bowl with 2 T of the oil, rosemary, 1 t salt & pepper for at least 2 hrs. before cooking.
Heat grill to med. Divide remaining 1/2 C rosemary-garlic oil into 2 small serving bowls; one for grilling & one for serving. Alternately thread 3 pieces of sausage, 3 pieces of chicken & 4 sage leaves onto 6 12" metal skewers.
Grill skewers til one side is browned, @ 4 min. Brush with rosemary-garlic oil, flip & cook other side, @ 4 min. Continue cooking, flipping & brushing with oil til both sausage & chicken are cooked thru, @ another 10 min.
Let cool a few minutes & arrange arrange on platter, drizzle with reserved serving oil & serve immediately
