Ingredients
- Scallops
- 2 T Butter divided
- 1 tsp sugar
- 1 tsp salt
- 1 C white wine

Preparation
Step 1
Rinse them, pat them really dry.
Put 1 tsp of salt and 1 tsp of sugar in a bowl. Mix together.
Sprinkle on each side of the scallops. (I do second side once they are in the pan).
Put 1 TBL of butter in sauté pan.
Cook scallops on pretty high heat. You want them to sauté up pretty quickly. It's about 3 min. on each side.
Take out of pan and set aside.
Add 1 TBL butter and 1 cup of white wine.
Scrape the scallop crust from bottom and mix into wine/butter.
Bring to soft boil.
