Ingredients

    tablespoon butter

  • 1/2

    small onion chopped

  • 2

    green onions chopped

  • 1/2

    cup reduced-sodium chicken broth

  • 1/2

    cup heavy cream

  • 1/2

    teaspoon salt

  • 1/2

    teaspoon freshly-ground black pepper

  • 1/8

    teaspoon freshly-ground nutmeg

  • 2

    packages frozen leaf spinach - (10 oz ea) thawed, squeezed dry

Directions

In a medium skillet, melt butter over low heat. Cook onion and green onions 5 minutes, until softened. Stir in broth, cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat to medium and cook 15 minutes, until liquid is reduced to 2/3 cup, and is thick enough to coat the back of a spoon. Chop spinach; add to sauce and mix very well.
