Ingredients

  • 3 eggs
  • 1 1/2 C. sugar
  • 1/2 C. brown sugar
  • 1 C. oil
  • 1 tsp. vanilla
  • 3 C. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 C. grated zucchini
  • 1 1/2 tsp. cinnamon
  • dash of nutmeg
  • 1/2 C. walnuts

Step 1

In large mixing bowl, blend together eggs, sugars, oil, and vanilla. In a separate bowl, mix flour, baking soda, baking powder, salt, zucchini, cinnamon, and nutmeg. Fold dry mixture into liquid mixture. Add walnuts. Bake at 350 degrees for 1 hour.

24 muffins: 28-30 mins.
