Shrimp Lo Mein

  • 1 cup chicken broth
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • 450 g jumbo shrimp
  • 280 g fresh steamed chow mein noodles
  • 1 carrot, diagonal sliced
  • 1 cup snow peas
  • 1 cup quartered mushrooms
  • 3 cloves garlic, minced
  • 3 heads baby bok choy, quartered



Step 1

Stir together broth, oyster sauce, corntarch & sesame oil. Set aside.
In wok yeat 1 tsp of oil over med-high heat, sauce shrimp until pink & opaque throughout, about 2 min. Remove to plate
Cook noodles, drain
Meanwhile, add remaining oil to wok; saute csrrot, peas, mushrooms & garlic over med-high heat until garlic is fragrant, about 1 min. Add bok choy; saute just until wilted,d about 1 min. Stir in broth mixture, shrimp and noodles. Cook, tossing, until sauce is thickened and noodles are coated about 1 min.
