Caramel Apple Pizza

Ingredients

  • 1 4 oz. Pizza Dough (Rolled Thin)
  • ¾ cup Mozzarella Cheese
  • ¾ cup Sauteed Apples
  • ½ cup Julienne Caramelized Onion
  • ½ cup Crumbled Gorgonzola Cheese
  • 2 Tbsp. Chopped Fresh Sage
  • Pizza Dough
  • Yield; 10 4-oz dough's
  • Ingredients Ap. flour 1 lb.
  • High Gluten Flour 4 oz.
  • Whole Wheat Flour 4 oz.
  • Salt 1/3 oz.
  • Sugar ¼ oz.
  • Yeast ½ oz.
  • Water, warm ½ cp.
  • Honey ½ tbsp.
  • Blended Oil 1 tbsp.
  • Water, cold 1 cp.

Prep in advance:
Core and slice the apples and sauté them with a pinch of cinnamon and ground allspice. Julienne the onion and cook in a heavy bottomed pan over medium heat until a rich, sweet, golden brown.

Assembly:
Spread the Mozzarella cheese on the pizza crust in an even layer. Add the apples and onion. Crumble the desired amount of Gorgonzola on top and bake. Bake at 400 degrees for about 8-10 min.(cooking time will vary) Until cheese is bubbly and crust is nicely browned. Top with chopped sage, cut and enjoy.


Method
1. .Place the flours, salt and sugar in a mixing bowl with the dough hook attachment.
2. Combine the warm water, yeast, honey and oil in a measuring cup, stir and let bloom for 5 minutes; once bloomed add it to the mixing bowl with the cold water.
3. Mix on low speed for about 10-12 minutes
4. Remove the bowl from the mixer and cover, set in a warm area until the dough has about doubled in size
5. Punch the dough down and divide into 4 ounce portions
