Mash with Caramelized Shallots

  • 2 lb potatoes,peeled and large-diced
  • 1/2 cup butter,cubed
  • 1/2 cup heavy cream
  • 4 shallots,peeled and finely chopped
  • 2 tbsp BURBON
  • SALT AND PEPPER

Preparation

Step 1

In a non-stick pan,fry 2 cubes of butter with Burbon,add shallots on medium heat.Stir often with a wooden spoon until deeply caramelized .Reserve for mashed potatoes.Place the potatoes in a pot of salted water and bring to a boil.Reduce the heat to a simmer and cook the potatoes until fork tender,about 12 to 15 min.Remove the pan from the heat and drain.Place the potatoes back in the pot and return to low heat.Stir the potatoes,constantly until dry.Run the potatoes through a food mill,or use a potato masher.Add the butter,a few cubes at a time,and mix until melted and combined.add enough cream until desired smoothness is achieved.Fold in caramelized shallots.Season the potatoes with salt and pepper.
