Stir Fry Snow Peas

Ingredients
- 2 t toasted sesame oil
- 2 C sliced fresh snow peas
- 1 C thinly sliced carrots
- 1 C sliced mushrooms
- 1/2 C green onion, thinly sliced, divided
- 1 T light soy sauce
- 8 oz rice noodles or other Asian style noodles (2 Cups)
- Sesame seeds, optional

Step 1
1. Coat nonstick wok or skillet with sesame oil. Place over high heat 1 minute.
2. Add snow peas, carrots, mushrooms and 1/4 C of green onion
3. Stir fry over high heat until vegetables are crisp tender
4. Add soy sauce and cooked noodles. Toss 1 to 2 minutes or until heated through. Top with remining 1/4 C green onion; sprinkle with sesame seeds.
