Stir Fry Snow Peas

Ingredients

  • 2 t toasted sesame oil
  • 2 C sliced fresh snow peas
  • 1 C thinly sliced carrots
  • 1 C sliced mushrooms
  • 1/2 C green onion, thinly sliced, divided
  • 1 T light soy sauce
  • 8 oz rice noodles or other Asian style noodles (2 Cups)
  • Sesame seeds, optional

Preparation

Step 1

1. Coat nonstick wok or skillet with sesame oil. Place over high heat 1 minute.

2. Add snow peas, carrots, mushrooms and 1/4 C of green onion

3. Stir fry over high heat until vegetables are crisp tender

4. Add soy sauce and cooked noodles. Toss 1 to 2 minutes or until heated through. Top with remining 1/4 C green onion; sprinkle with sesame seeds.
