Buttermilk Cornbread
One of my favorite recipes for cornbread (also like sour cream and southwestern cornbread recipes). It is a simple and timeless recipe that is virtually foolproof.

Ingredients
- 2/3 c flour
- 2/3 c yellow cornmeal
- 2/3 c white cornmeal (or 1 1/3 c cornmeal)
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp sugar
- 2 eggs, beaten
- 2 c buttermilk
- 3 Tbsp melted butter

Preparation
Step 1
Preheat oven to 400. Put a tablespoon of oil in a cast iron skillet and heat in oven.
Mix dry ingredients in a large bowl. Mix beaten eggs with buttermilk and melted butter. Add to cornmeal mixture and stir just until moist. Add to hot pan and bake 25-30 minutes until golden.
