  • Dressing:
  • 4 Large Potatoes, chopped
  • 1 Onion, cut fine
  • 5 Celery Ribs, cut fine
  • 2 Hard Boiled Eggs
  • 1 Egg, beaten
  • 1/2 Cup Sugar
  • 1 Tbs. Flour
  • 1/2 Cup Water
  • 1/2 Cup Vinegar
  • 2 Tbs. Butter
  • 2/2 tsp. Salt
  • 1/4 tsp. Black Pepper

Preparation

Step 1

Boil potatoes until tender. After cooled, peel off skins, and dice. Add the rest of the ingredients. Make salad dressing: Combine in order given, stirring after each addition. Boil until thick. Cool before adding to the salad. Refrigerate at least 6 hours or overnight.
