  • 3 lbs yukon gold potatoes, peeled
  • salt and pepper
  • 2 tbsp olive oil

Step 1

Preheat oven to 400 degrees. Shred potatoes on large holes of box grater, or using food processor. Wrap in paper towels, squeeze out liquid. Place potatoes in a bowl, toss with salt and pepper.
Heat 1 tbsp oil in 10 inch ovenproof saute pan over medium. Spread potatoes evenly in pan, press with spatula to flatten. Cook until bottom is golden, 18 minutes. Remove from heat.
Invert onto large plate or platter, slide back into pan. return to heat, spoon rest of oil around edges. Cook until other side is crisp, 10 minutes, shaking pan to loosen cake.
Transfer to oven and bake 10 more minutes. Invert onto cutting board, cut into wedges.
