Sweet Potato-Jalapeno casserole

Ingredients
- 5 lbs sweet potatoes
- 1/4 C butter
- 3 lg. fresh jalapenos, finely chopped
- 2 C (8oz) shredded Monterey Jack cheese
- 1 t salt
- 1/2 t black pepper

Preparation
Step 1
Bake potatoes @400 on oven rack for 1 hour or til soft. Cool; remove skins.
Place potatoes in large bowl; add butter. Beat potatoes til mashed. Stir in jalapenos, 1 C cheese, salt, and pepper.
Spoon mixture into lightly greased 9x13 pan; sprinkle w/ remaining cheese. Bake for 30 mins til edges are bubbly and cheese is melted.
Broil for 3 mins til cheese is golden and crispy
