Simple Mexican Tomato Rice

Ingredients

  • 1 large onion, chopped
  • 4 tbs olive oil
  • 2 cloves of garlic, minced
  • 2 cups rice
  • 1 can diced tomatoes, flavored or plain your choice
  • 1 large tomato diced
  • 3 cups chicken broth or stock
  • 1 sm can tomato sauce if needed
  • 1 1/2 tsp cumin
  • 4 tbs chopped cilantro or parsley

Preparation

Step 1

1. Heat skillet to medium - med high heat and add olive oil. Stir in chopped onion, garlic and rice. Cook rice until onion is clear and rice is just turning golden.

2. Add can tomatoes, fresh tomato, cumin and chicken broth. Bring to a boil.

3. Once it is boiling, reduce heat to low, add cilantro and simmer until all liquid absorbed and rice is cooked soft; about 20-30 minutes. If needed, you can you can add some tomato sauce or chicken broth to moisten rice more.
