Harvarti & Apricot Spread

This is a delicious dip which can be served with crackers, or simply eaten with a fork as a side dish. Ryan loves this one, and Big Hank tried to sneak away with it at Thanksgiving one year! Good to serve at Easter time with Ham. You can also make little individual Harvarti & Apricot bites. Simply use puff pastry sheets and cut them into 1 inch squares and put the ingredients into each square and twist the ends together and bake until golden.

Ingredients
- 1 package crescent rolls
- 8 oz package Harvarti cheese, cut into cubes
- 1/2 jar apricot preserves
- 2 tablespoons chives, chopped

Preparation
Step 1
Take 1/2 package of the crescent rolls and pinch seams together to make a square in the bottom of a 9 inch round dish with sides. Place cheese in the center of square and smother with apricot preserves. Sprinkle with chives.
Place the remaining square of crescent roll on top of the cheese and apricot preserves and pinch seams together at the sides to seal.
Bake at 325 degress for 15 minutes, then kick up the heat to 350 degress until golden brown and bubbly.
