Valentine's Day Shrimp and Pasta

Ingredients
- 1/2 stick butter
- 1 tablespoon olive oil
- 3 cloves minced garlic
- 1 cup low sodium chicken broth
- 1 cup dry white wine
- 2 tablespoons tomato paste
- 2 teaspoons fresh lemon juice
- freshly ground pepper
- salt
- parmesan cheese -- grated
- 1 1/2 pounds shrimp -- cooked and peeled
- 2 tablespoons chopped fresh parsley
- 12 ounces bow tie pasta
Details
Preparation
Step 1
Melt butter and olive oil in large saute pan over medium heat. Add garlic
and saute 3-5 minutes.
Add chicken broth and wine and a little pepper. Reduce by half.
Add lemon juice and tomato paste. Stir until blended. Adjust seasoning.
Remove from heat and stir in shrimp.
Stir in pasta and parsley. Serve with grated parmesan cheese.
NOTES : You can add or substitute other types of seafood. Scallops would be really good.
