- 3 shallots, peeled and sliced
- 5 Tbsp butter, divided
- 1/2 cup heavy cream
- 11 oz light cream cheese, softened and divided
- 3 Tbsp mascarpone cheese
- 1/3 cup chopped green onions
- 1 lb crab meat
- 2 oz goat cheese
- salt and pepper
Saute shallots in 3tbsp butter over medium heat until tender. Add cream, simmer until reduced by two thirds. Reduce heat to low and add 3oz of cream cheese and mascarpone. Gradually stir in remaining cream cheese and cook until thickened. Add green onions and remove from heat.
Gently fold in crab and pour mixture into 1.5 quart baking dish and sprinkle with goat cheese. Broil on top rack until cheese is melted and golden.
Serve with toasted baguette slices or veggies.
