Ingredients

  • 1 1/2 cups chopped red onion
  • 1/4 cup olive oil
  • 2 1/2 tablespoons grated fresh ginger
  • 1 1/2 tablespoons ground coriander
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper
  • 2 1/4 cups chicken stock
  • 1 28 ounce can crushed tomatoes
  • 1/2 cup finely chopped cilantro

Preparation

Step 1

In pot, cook first 6 ingredients over medium, stirring, until onion softens, 12 minutes. Add stock and tomatoes. Simmer 10 minutes; puree. Season. Stir in cilantro.
