Ingredients

  • 2 packages carrots, shredded
  • 1 can pineapple chunks, reserve liquid
  • 1/2 cup shredded coconut
  • 1 cup raisins (approximate)
  • 1/4 to 1/2 cup orange juice
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise

Preparation

Step 1

Combine carrots, pineapple, coconut and raisins. Then add orange juice, sour cream and mayonnaise.

Cover and refrigerate for 3 days.

Add additional orange juice and small amount of reserved pineapple liquid.

Add additional sour cream and mayonnaise to taste.
