GINGER PEANUT NOODLES

Ingredients

  • 1/3 cup creamy peanut butter
  • 2 1/2 teaspoons fresh gingerroot
  • 2 garlic cloves
  • 1 teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 2 teaspoons water
  • 2 1/2 teaspoons lime zest
  • 1/4 cup lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 oz. whole wheat spaghetti, uncooked
  • 2 cups small broccoli florets
  • 2 medium carrots, grated
  • 1 medium red bell pepper, julienned
  • 2 green onions, sliced thin
  • 2 tablespoons fresh basil, minced

Preparation

Step 1

Combine first 10 ingredients in a food processor or blender and process until blended.

Cook spaghetti according to package directions, adding broccoli during the last 5 minutes; drain.

Transfer noodles and broccoli to a large bowl. Add remaining ingredients. Add sauce and toss to combine.

Makes 4 servings
