Ingredients

  • 2 cans of artichoke hearts, drained
  • olive oil
  • 4 cloves of garlic, minced
  • 6 eggs slightly beaten
  • 1 cup parmesan cheese
  • garlic powder
  • sald and pepper
  • 8 oz mozzarella cheese
  • 2 uncooked dep dish frozen pie crusts(Pillsburry)

Preparation

Step 1

Drain the artichoke hearts. After draining place into the heated olive oil and garlic. Cook on medium heat (do n ot brown). When soft, mash a little. In a large bowl, slightly beat eggs. Add some salt and pepper and garlic powder. Mix in mozzarella and parmesan cheese and once mixed, stir into the cooked artichoke hearts and olive oil mixture. Cook for about a minute constatntly mixing. Turn off flame and stir into pie crust and cover with the top pie crust. (Brush with egg wash)

Cook at 375 degrees for about 45 minutes.

Serve hot
