HONEY LEMON COOKIES

Ingredients
- ◾2 1/2 C. all purpose flour
- ◾1/2 tsp. baking soda
- ◾3/4 C. butter, softened
- ◾1/4 C. honey
- ◾2/3 C. sugar
- ◾1 large egg yolk
- ◾1 Tbs. grated lemon peel
- ◾1/2 tsp. vanilla extract

Preparation
Step 1
In a bowl, mix flour and baking soda. Place butter, honey and sugar in a separate bowl until light and fluffy. Add egg yolk, lemon peel and vanilla. Whisk until smooth. Stir in dry ingredients until combined. Divide dough and roll each half into an 8-inch log. Wrap and freeze for at least 4 hours.
Preheat oven to 350 degrees F. Grease 2 cookie sheets. Cut logs into 1/4-inch thick slices. Arrange 1/2-inch apart on prepared cookie sheets. Bake 6 to 8 minutes until golden
